You are signing a human-readable message that proves wallet ownership. Lighter does not ask you to sign anything that gives permission to move funds.

Do I need to sign every time I log in?

No, you only need to approve Sandwich as an integrator once per account. Sandwich will then be approved as an integrator until our integrator approval expires or you revoke our integrator approval. You can revoke integrator approval at any time.
